Long Description
Responsible for developing the culinary offering to agreed standards for Etihad Airways Global lounges. Provide a world class culinary experience on ground, Hub, Etihad operated and Third-Party lounges, for all Etihad guests, with the target to achieve the highest customer satisfaction ratings, Food & Beverage NPS, and alignment with overall Guest Experience & Hospitality strategy.
Accountabilities
• Drive and implement the Global Lounge food philosophy, including menu development to agreed standards across hub and outstation service providers.
• Develop all menu cycles for Hub Etihad operated and Third-Party lounges, to enhance the on ground experience and ensure accuracy of menu specifications, standard guidelines, cycle plans.
• Work closely with procurement to ensure reliable supply chain and sustainable menu development for Hub volume required.
• Evaluate hub product tender submissions and product scope creation for all Etihad food items, specifically in the Global lounges.
• Network wide activation planning for all lounges, including events, festive and religious celebrations.
• Organise photoshoots for Etihad publications, including social media for lounge and lounge concepts.
• Accountable for overall Terminal A menu development, devising 10 different concepts and offerings.
• Establish strong working relationships and stakeholder management, with Hub caterers and global service providers.
• Monitor and audit performance of hub caterers through onsite meal tastings in lounges and Third-Party lounges, reporting back to Etihad Senior Manager’s with recommendations for actions.
• Etihad link with Procurement, supply chain and suppliers to develop scope and evaluations of lounge provider and products.
• Manage internal and external functions, representing Etihad with high standards at all times.
• As a core part of the culinary team, the Manager Hub & Global Lounge Menu Design and Standards is involved in other airline food & beverage projects and requirements as required.
Education & Experience
• Airline or large-scale production facility catering experience preferred bachelor’s degree or equivalent work experience (essential)
• Minimum five years’ experience in senior chef positions held within five-star hotels and restaurants with Michelin star (or country-specific equivalent) establishments (preferred)
• Leadership and management of large teams to deliver key programs of work and projects across multiple stakeholders both internal and external
• Excellent client-facing and internal communication skills
• Excellent written and verbal communication skills
• Strong organizational skills, robust working knowledge of Microsoft Office Suite
